Our Creative Lollipop Cookies


  Me and my nephew made these special cookies when he was over a little while ago. I thought I try a fun and creative cookie, especially it being from a kid's cooking book,  you cant go wrong with that :). He was very helpful with mixing, putting the lollipop's together and  seem to have fun decorating. He also was sneaking some cookie dough during and kept telling me to try some because it was so good lol :). I do think peanut butter cookies have the best dough/batter, but I don't always recommended eating it since most recipes include egg. It is very low risk of getting anything, but if you must try some of the dough keep it to a low limit to be safe. Its hard though because it looks so tasty especially whenever other treats are added as well lol.

The cookies are a basic peanut butter with an added twist of being baked to look like a giant lollipop. I liked that we could decorate and use any item that we had on hand. For us we had leftover Christmas colored sprinkles and some butterscotch chips which pair pretty well with peanut butter flavor. For the decorating we did any pattern we liked and I think we made one with a smiley face which I got my nephew to give to his grandpa (my dad).


Putting the lollipop cookies together were very simple to do.However I do recommend to prevent any slip ups along the way is to be careful not to insert the sticks to far or to thinly into the dough because you can have breakage Also it be a good idea not to flatten the cookies to much to prevent having uneven baking times for all the lollipops.As along as you follow those important rules you cant go wrong with this recipe.


I really love these treats because there a great homemade peanut butter cookie, you get to decorate and they have the added bonus of eating without touching them with your hands. No sticky or messy hands! :)

The flavors and texture are everything you want in a peanut butter cookie. Their crunchy, soft and rich in peanut butter flavor. The decoration of any choosing will affect the overall flavor of the cookie and for me the butterscotch chips gave a get end sweetness. I give this altered recipe 2 thumbs up!

I really like this kids cooking book and it seems to have really fun recipes. So I plan to try out more of these for myself :)

Peanut Butter Lollipop Cookies (Adapted From Peanut Butter Gem Lollipops, Company's Coming Kids Cooking )

1/2 cup butter,softened( room temp)
2/3 cup brown sugar
1/2 cup granulated sugar
1 large egg
1/2 cup smooth peanut butter
1 tsp vanilla extract
1 1/2 cup all purpose flour
1 tsp baking soda
1/8 tsp salt
Decorations:
Red and green sprinkles(optional)
Butterscotch chips(optional)

Oven to 350F,nonstick pan or greased cookie sheet.
Beat butter(cut into pieces), brown sugar, granulated sugar, egg, peanut butter and vanilla extract, till smooth.
Stir in flour, baking soda and salt.
Once combined, shape 1/4 cup(50ml) dough into balls.
Insert pop stick half way through the cookie.( Dont go to far or you will have to redo it)
Place on pan, flatten cookie with either using the bottom of a glass or using the palm of your hand.(Using your hands is easier and more fun especially with kids)
Baking in oven for 9-12 minutes, or until golden brown.
Some cookies that are thicker will take longer to bake so try to make all the cookie pretty even thickness.
Remove the cookies, let cool for a couple minutes.
Decorating:
When still warm on the cookie sheet, decorate with (red and green sprinkles).Place your chips in patterns or faces.
Chose you own decorations.
