Happy Sugery Easter

Happy Easter Everyone!

Hope every one's long weekend is full of chocolate, great food and relaxation! Hopefully good weather too.

So far for the Easter weekend I have made Easter/Spring sugar cookies with an added bonus of chocolate chips and dried cranberries yum :D.These cookies are always a hit around this time of year and so simple to bake. Also last night we all dye some Easter eggs and I made sure to showcase some in the pictures. Hehe can you find the hidden Easter egg? lol :P. Easter pictures cant go without Easter eggs and mini eggs :). I will also have a follow up Easter dessert in the upcoming days :).

For more recent news last week I found out I won a giveaway from Suzie the foodie for a "Digital Food Photography"Book. I just received it this passing Thursday and its quite an interesting read. I also found a couple good finds of cookbook at the used book store near where I live. I actually got a Martha Stewart hardcover book for $4. No slipcover and a few pages damage from spillage. But all the recipes are intact and a new version of this book can range from $20-$45. My second book was a Canadian fundraising cookbook for $2, which featured comfort food recipes from around the world. Including Italian,Asian,Thai,German etc. I love this kind of book where it has multiple recipes.A Used bookstore is the only way to go for a cookbook that is affordable and still in good shape.

Back to Easter Treats.......

Well for this recipe I change it up a notch and added my special treats into the cookie dough. Plus I gave them all special Easter shapes.For something fun and different,I'm giving you a bullet detail list to this recipe instead of long paragraphs, which is never fun lol :)

Pros :
  • Simple directions and ingredients.
  • Very adaptable for other treats and replacements
  • Chills and rolls out easily
  • Keeps cookie cutter shapes
  • Great for decorating with icing or sugar
  • Dough pairs well with dried fruits and chocolate etc
  • Length about 1 hour + 
  • Baking timing is basically right on about 6-8 minutes, perfect time is 7 mins for lightly golden. 
  • Cookies keep for a long time under room temp, longer in fridge.
  • Great for lunches and snacks 
  • Very kid friendly 

  • Unable to roll out dough to thin if chocolate chips or cranberries are added.

Soft, flaky and crunchy. Melt in your mouth with a chewy aspect from the cranberries. Melty, soft texture from the chocolate chips.
Basic delicious sugar cookie without any butter being used.I however would of prefer it for a more buttery flavor.Lightly and mild sweetness from the cookie dough while the cranberries give a tangy sweet. Chocolate chips help balance out the sweet and flavor among the cookie. Fruit and chocolate have always done well together :).
I give 2 thumbs up for this recipe!
Sugar Cookies Easter Shapes
2/3 cup Tender flake lard
3/4 cup sugar
1 tsp almond extract
4 tsp half &half cream
2 cups all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/4 cup dried cranberries, chopped finely
1/2 cup milk chocolate chips
Med bowl.Beat fat, sugar and almond extract well.Add eggs and beat till fluffy.
Stir in milk.Blend in flour,baking powder,and salt, till fully combined. Divide dough in half and wrap in saran wrap and chill for 1 hour or overnight.
375F for oven. Roll out one batch of dough and keep the second batch chilled.Flour surface and roll out dough till it hits the chocolate chips/cranberries about 1/8 inch thick.Flour cookie cutters and press into dough. Place on a greased or nonstick pan for 7 minutes exactly till lightly golden brown.Repeat  steps till first batch is gone and continue with the second.Cool slightly on pan and transfer into rack.

Short And Sweet Recipe

 I'm going to give a short and sweet write up, since its a late night and I've left this recipe review alone for quite bite.So I'm going to give you a point form of my pro and cons of the recipe and my findings.  I'm trying something different for the blog. I also might be taking a short break from making posts because I want to put more of  my attention on health/fitness in the biggest loser private group/game. I've also decided to slow down on my baking for now. I have to find my baking spirit again and it will soon come back to me.

 My review of my late night baking that happened a week ago in which I made lemon slices.

 Pros To Recipe:

  • Simple ingredients.
  • Pretty easy to adapt or make your own recipe.Especially with different crusts, toppings and even adding different textures and flavors to the middle filling.
  • Quick baking time with this recipe and its possible to skip the first baking time for the crust,but it will give a softer crust and less of a cookie crust.
  • Easy measurements and simple directions.
  • Simple to put together and unlikely to burn.Cools quickly in fridge and quite easy to cut into squares.
  • Sprinkle an handful of graham crackers to the toppings, gives a element of fun to the dessert square.


Its a a light and fluffy filling with a slightly crunchy and mealy crust. The topping gives a nice soft and rough texture.A slight con is the crust leaves a bit of a greasy/oily residue set on a surface; however I'm pretty sure that's due to me not baking the crust in the first round.


A nice balanced lemon flavor along with the aromatic graham cracker crumbs. Its a bit sweet and will perk you right up, but the egg whites do help quite a bite to balance the sweetness and sugar rush :).They are very good the next day staying in the fridge because they absorb their flavors overtime.


A great layered looking dessert and a intense appearance.The fluffy aspect of the egg whites gives a great lift in the layers.My only con I would say is this dessert needs to be kept in the fridge to stay in top notch condition and stable. They are able to be eaten by hand or using a fork and plate.

Cons To Recipe:

  • Separating your own eggs can be a con for some people.  If a little yolk gets in the whites, remove with a small spoon and it will be perfectly fine.
  • Waiting for the water to boil takes a bite of time
  • Do not leave to long without whisking because it will leave little sugar clumps.
  • Egg whites take some time to beat in stiff peaks, but if you beat on medium speed it goes quicker. 

Overall, I really like these lemon slices and I know very well they were liked in my family. My sister really likes lemon so she is always happy when I make lemon incorporated recipes.These were flavorful and elegant desserts. I can very well see different ideas being adding to the recipe. If anyone chooses to make theses lemon slices I would love to hear your finding and experiences with the recipe.I had a lot of fun making and eating theses delicious squares.

Lemon Slice (Adapted Lemon Slices,Company's Coming, 150 Delicious Squares, Jean Pare, 1989)

First Layer:
1 cup Graham Cracker Crumbs (pkg of crumbs or crush graham crackers)
1/2 cup margarine/ butter
1/2 cup white sugar
Second Layer:
3/4 cup white sugar
1/3 cup all purpose flour
1 tbsp water
3 egg yolks, separate, save whites.
2 1/2 tbsp lemon juice or 1 lemon
Rind from 1 lemon (Optional)
3 egg whites
1 handful of graham cracker crumbs

First layer:

Medium bowl. Measure and combined ingredients. Mix with wooden spoon till mealy and fully combined.
9 inch glass pan and press graham cracker crust in pan, evenly.Bake for 10 minutes in 350 F oven. (Info: I forgot to bake the crust in this stage and baked it with the second layer, it works out perfectly fine. But baking the crust makes it more stable.

Second Layer:

Set up double boiler.Medium heat. Add sugar, flour, water, egg yolks, lemon juice and grated rind to top boiler.Stir mixture over boiling water till thick/combined. Whisk.( If you have no double boiler, place a large glass bowl over a pot of boiling water,be sure not to let water hit bottom of bowl. Proceed to add ingredients)

Once the mixture hot, turn to low heat. Beat egg whites in large bowl with electric beater on medium speed till develops white stiff peaks. Once reached this stage. Remove top boiler and fold whites into the hot mixture, till fully combined.

Pour mixture over cookie base, spread evenly. Sprinkle a handful of graham cracker crumbs.Bake in 350 F oven for 3-4 minutes, till second layer is set.Cut into squares.
