Two-Bite Blueberry Muffles

In my opinion, it has to be, hands down the blueberry muffin.Because its nostalgic and everyone has a family favourite recipe. It's such a classic and versatile muffin that in this particular recipe it's transformed into a homemade waffle. These are called two-bite blueberry muffles. 


 
These treats have all the same lovely components of a simple blueberry muffin recipe; however this time it's quicker to put together and one batch will bake in three minutes flat. The waffle iron helps create these crisp mini waffles that have all the great attributes of a classic muffin. They are delicious cold as they are warm and need no embellishments to enjoy. The blueberry muffles become a soft, fluffy cake-like waffle, with sweet juicy blueberries. 


This recipe is also very simple and adaptable meaning you can experiment as much as you want with it. Here, you can easily use fresh or frozen fruit, swap out the sugar or flour, or even create a healthier version.  In the end, mini muffles become an excellent go-to portable snack for any time of the day. Two Bite Blueberry Muffles

3/4 cup all purpose flour
1 1/2 tsp baking powder
1/8 tsp salt
1 large egg
 1/4 cup granulated sugar
1/3 cup milk
1/4 cup butter,melted or vegetable oil
1 tsp vanilla extract
1/2 cup small blueberries(fresh or frozen)
Butter,softened or vegetable oil


1. In a large bowl, I whisked together all purpose flour,baking powder and salt.


2. In a medium bowl, I whisked together egg, sugar,milk,melted butter and vanilla.


3.Poured the flour mixture over the egg mixture,sprinkled in frozen blueberries.Folded in the mixture just until evenly moistened.


4.Preheated the waffle maker and brushed with butter or vegetable oil.


5.In batches, I dropped batter by heaping tbsps (15ml) in waffle maker. Then gently closed the lid and cooked for about 3 minutes or until golden brown on the outside and edges no longer wet.


6.Then I transferred them to a wire rack to cool,repeated with the remaining batter.Making sure to brush the waffle maker with butter in between batches.
