This is a recipe from my Italian foods class from grade eleven. I made these just a few hours and there just delicious. They have a very soft and fluffy texture with a sweet lemony taste to them. They also have a one bite rainbow like appearance.
These kinds of cookies will be gone so quickly because they seem more like a simple snack then a cookie. I have made these several times in the past and every time I make them I forget how addicting they are.
Italian Sprinkle Cookies (Written By Berendina Dykema, Italian Foods 11)
65ml margarine
125ml sugar
2 eggs
375ml flour
2ml vanilla
2ml lemon
7ml baking powder
Glaze
75ml icing sugar
1 tsp warm water
1.5 sprinkles
1ml vanilla
1.Preheat oven 350F.
2.Cream margarine in bowl.
3.Add 25ml at a time to the fat, cream.
4.Crack eggs on at a time to fat, beat.
5.Add 2ml vanilla and 2ml lemon juice.
6.Measure flour, add baking powder to flour.
7. Add half of your dry to your wet, stir, and then add the rest.
8. Grease cookie sheet.
9. Roll patter into balls and place on sheet.
10.Bake for 10-15 minutes or until lightly golden brown.
11.Mix icing sugar, add 15ml warm water and 1ml vanilla.
12.Dip cooled cookie in glaze and then sprinkles.
Optional:Can have any kind of sprinkles you wish or none at all.
