Waffled Carrot Cake


Is this for breakfast? For brunch?  Or is it a dessert?
The answer is, all of them! Because we can enjoy a waffle anytime..... Right?

So, dust off that waffle maker and put it to the test by taking a traditional carrot cake recipe and creating a waffled version.Yes, that's what I said, now you can too enjoy cake wrapped up in a waffle. 

Plus, This recipe keeps all the same basic ingredients and even directions to a beloved carrot cake. However this time it's quicker than any oven can compete with and is more portable than ever.



It's that nostalgic delicious flavour and texture we want to keep and this recipe definitely delivers.It has a soft,moist cake-like texture along with a creamy cream cheese frosting.The aromatic spices and carrot create an excellent flavour and sweetness to the overall waffle.You just cannot go wrong with a a carrot cake waffle.

Waffled Carrot Cake

1 1/4 cup all-purpose flour
1 tsp baking powder
1 tsp cinnamon
1 tsp ginger
1/4 tsp nutmeg
1/4 tsp salt
2 large eggs
2/3 cups packed brown sugar
1/3 cup vegetable oil
1/4 cup milk
1 tsp vanilla extract
1 1/2 cup shredded carrots ( about 2)
Oil or cooking spray
 

Preheat the waffle maker to medium. 


In a large bowl, mix together flour, baking powder, cinnamon, ginger, nutmeg and salt.


In a medium bowl, mix together eggs, brown sugar, oil, milk and vanilla. Stir in the shredded carrot.


Pour wet mixture over the flour mixture and stir just until evenly moistened. 

 
Oil or spray waffle maker. For round, free-form cakes drop a 1/3 cup of batter in the centre of the waffle maker. Gently close lid and cook for about 3 minutes or until golden brown outside and edges no longer look wet.  For traditional waffles, fill each section of the waffle maker with 1/3 cup of batter.


Transfer waffles to a wire rack to cool and repeat with remaining batter, greasing if necessary. Serve warm or at room temperature.


Cream Cheese Frosting


Cream together 1/2 cup of softened butter, cream cheese and granulated sugar, till creamy.Drizzle or dollop of cream cheese frosting on waffled carrot cake.
