Cupcakes And 19th Birthdays

On Sunday night, I attended my friend Krysta's 19th birthday adventure along side two of our good friends and her close family members. We all showed up to a neighborhood pub and began choosing drinks for the birthday girl to try out. I also bought along cupcakes I made special for her birthday and eventually when she became drunk enough she began to say they looked like cupcake breasts because of the chocolate in the middle. We all found that pretty hilarious and how bubbly she was the whole time.

Krysta, friends and everyone else that tried out the cupcakes all gave really positive compliments and Krysta was so happy I made her baked good for her birthday, she kept thanking me. I also bought art supplies for her as a gift to try out and showcase some work on her blog.

All the cupcakes were eaten and even one was left that Krysta's mom gave to the barmaid for being such a great waitress to us.The cupcakes were deliciously moist, sweet and everything you ask for in a cupcake. It was a vanilla based cupcake with strawberry jam hidden inside. It was topped with colored butter cream frosting, sprinkles and green candy melts.

It was a recipe used in "The Big Book Of Baking" and it was pretty simple to follow. Its easy to alter and its simple to add or change the recipe for your liking.I have never made a vanilla based cupcake and have always made chocolate flavors so I learned something new in a recipe.

I always have a lot of fun in my baking;however this time was way more because I got to make it for a good friend on her birthday.Hope she enjoy the cupcakes and gifts. Also I hope she had a lot of fun on her birthday despite the hangover the next day. It was a amusing and eventful day that we probably will never let Krysta forget about.

So try out the recipe for yourself.

What I Did:
  • Added strawberry jam to the middle of batter and then topped with batter, all before baking.
  • Frost cupcakes with purple and turquoise butter cream
  • Used larger cupcake pan instead of a shallow muffin pan( not edited into recipe)
  • Used sprinkles and candy melts for decorating
  • Double the recipe to fit larger cupcake pans,( did not edit that in the ingredients lists)

Surprise Cupcakes
(Adapted From Frosted Cupcakes, The Big Book Of Baking,Love Food)

1/2 cup butter,softened

1/2 cup superfine sugar
2 eggs,beaten
1 cups self- rising flour
Frosting and Decoration
1 3/4 cup confectioners' sugar

Food coloring set
Sprinkles and green candy melts
1 tsp of strawberry jam to each cupcake

1.Oven to 375F. Place paper liners in a cupcake pan.
2.Beat the butter and sugar in a large bowl until pale and fluffy.
3.Gradually add the eggs, beating well after each.
4.Fold in the flour evening with a metal spoon (or rubber spatula)
5.Fill the paper liners quarter way and then add 1 tsp of strawberry jam to the middle. Then top with batter till jam is not visible.
6.Bake for 15-20 minutes or until golden brown and toothpick test.Cool on the wire rack.
7. Frosting: Sift confectioner sugar into a bowl and stir in just enough water to make a smooth paste that is thick to coat a wooden spoon,
8.Separate icing into two bowls( 1/2 cup). Add red and blue food coloring to one bowl. ( I went with a darker purple)
Second bowl added blue and green (I got a nice bright turquoise)
9.Press with a green candy melt and then sprinkle on the rainbow colored sprinkles
