Will There Be A Baking Community Site In The Near Future?

Someone with the skills and knowledge in making a online website should really consider launching a baking community website for bloggers to add there baking sites. Also a place where fellow baking lovers can reach to one site to see great baking done by people and reviewed by people. Im sadden there isnt a site like this because there are so many blogging community sites for specific topics but not for the world of baking, which surprised me when I couldnt find anything!?.

Well I really wished someone would make a site for us baking lovers! or addicts lol

Christmas Gift Baking!

Finally back and well rested to start releasing some more posts!

So how was every one's Christmas/Holidays? :D

Mine was really great and I have lots of baking stuff to try out for upcoming recipes :P. I don't even know where to start lol?

I promise though from the last post I would release the baking I did for gifts :D right?.
For one, I gave away those delicious spectalass cookies I posted about just before Christmas,which were very well received.

The other two items I gave away were simple snowflakes and mini butter tarts 

I had a lot of fun making the snowflakes because it was something I had  never done before. I thought they were really simple to make and very creative. The feature of using the straw to make the holes I thought was very smart and made them look very fancy. I also took my own idea of using toothpicks for different sizes. It really helped experiment with different patterns so the cookies did not look all the same. Then the last feature of the sifted icing sugar really tie these cookies together. They were officially snowflakes in the cookie world :D.

Its Christmas Eve!

Its already Christmas eve! :) and I'm still tired from all the baking last night. I really wanted to get everything done baking wise on the 23rd so I would have today as a nice relaxing day. 

My cold is a lot better, but strangely still kicking around, but no near how bad it was, yay :D. Just took a refreshing nap today because this weather just makes you want to sleep. Weather everywhere in Canada is horrible right now :(, but were at least lucky in B.C that its not as damaging as some being hit hard in the east coast of Canada and eastern states.

Been seeing some really nightmarish videos on the news and I'm so glad there has not been any deaths. It makes me sad how many people have lost there homes from being damaged from the weather and all the stuff they lost just before Christmas. Hopefully they can get through it and still have a good Christmas with family.

From that event ,I sure know what I am thankful for this Christmas. Its having all my close family near me and having a roof over my head in this weather :).

Anyways there has been some really good things that have happened recently here. I just finished all my baking for gifts and gave Dave this afternoon his little Christmas canister full of goodies and a favorite of his a small box of Jelly Belly's. It was all XOXO lol ( I don't kiss and tell lol) and thanks yous after that lol.

He gave me some really pretty purple/ black feathered earrings, which I am wearing right now :D. Dave knows that my favorite color is purple and I think I have obsession with wearing at least one or two items of the color :). So it fits me perfectly and very elegant looking.

Anyways I'll be posting as soon as I can on what I have made for those baked gift . I wont be posting anything till after Christmas so its a surprise for all the receivers :D.

Christmas Houses And Cookies!

Just finished up last night my version of the candy cottage from " No bake gingerbread houses for kids book".Here's me explaining how it all came together.

I started out with the simplest house to see how I would do. At first it was kind of difficult since I didn't seem to have the right crackers, but graham wafers still worked well and just needed to have a longer drying point to keep everything together :). 


A couple days later with lots of time for  the house to become solid I bought a few small packages of candy from our nearest convenient store. I used whoppers, nibs and Swedish juice berries which definitely  bought the house more color and became my very own candy cottage. I even had candy on the house from previous of chocolate chips, marshmallows and caramels :).

I have been battling a cold for a few days now and it has just hit its worst point yesterday :(. I did however get some baking done a little before I got the full effect of being sick. So I was able to get some posts done for everyone :). I am going to try to get plenty of rest and hoping this cold is gone by at least Monday so I can have a week left to do some more Christmas baking :D.

While I am still recovering, in the meantime I thought I share some treats with all of you, pictures that is :D

Only 8 more days till Christmas! :D, Holy Smokes I didn't even think it was that close. I feel as though its like a month or two away lol and still thinking I have a lot of time to spare in making more holiday treats. Hahaha look at me talking like I'm force to do this or something. I really love blogging about food and recipes I really do, but sometimes I feel I'm missing out on trying out really great recipes meaning so much to do but so little time kind of thing.However I always plug into reality and understand I have lots of time to try out more and more holiday treats in the future lol. I have noticed though since I have started this blog it has pushed me to bake a lot more since I feel I need to post more and talk about what I love to do even if its just me reading it.


So I'm going to stop beating myself up about recipes I cant squeeze in and just have fun with it. I am going to start now with this post which is about a great treat for the Christmas holidays. Its actually a Italian treat that most of you probably know about , but may of not all tried some.Its a great treat to add to give some class to your holiday tray on Christmas eve or Christmas day and pair so well eaten with coffee. I would said its a dunking sort of cookie and probably suits hot chocolate as well if your not a coffee liker like me lol.

So if you want I"ll tell you my explanation of what I did in this recipe. So stay tune!......


Holiday Carrot And Peach Muffins

Here is another Christmas treat heading your way and its something fruity, excellent source of vegetable and tastes great :) It was a challenge for this recipe and I wish I could go back and do it  again so they be a little bite better in appearance. The taste hasn't failed here though and they are top notch for flavor/ texture. Here is what I'm talking about for everyone to understand and it may even help someone out.
 

The recipe looked to me as a pretty basic muffin recipe but looks can be deceiving at times. It can even catch you off guard and you end up making smalls mistakes with simple instructions. Even following a recipe directly doesn't get you the results you wanted, which means you got to do your research and what you have learned in the pasted.

For me I wished I sifted the dry ingredients together evenly;even if the recipe did instruct to only mix them together. If I knew then what I know now about certain vegetables/ fruits being easily affected by certain components in the cooking process I would of prevented it. For you here is a short explanation what happen to me and there is also a good source that gives you more information on the topic.Should help answer your question and prevent it.


Why did carrot shredding become green when cooked in a cake/muffin?



This happen to me with this recipe and I have never seen this before. I found out a few reasons why this happens and what causes it. A blog called " the kitchn" inspiring cooks, nourishing homes"  found out the answer from a book about food and cooking.She explains that the book said that carrots become green while baking if there is to much baking soda added or when the soda is not evenly within the dry. Carrots are very sensitive to PH levels and change the color of the carrots. It's perfectly safe to eat like any normal cake, just for the observing eye may put people off(only seen from inside)


There is also another direction I wish I changed which would have been to fold in the wet ingredients instead of beating it in like the recipe asked because most people know over mixing pretty much a crime for a muffin. You end up with either flat or round tops or worst tunnels within. Strangely this recipe wanted me to beat with a  electric beater which was new to me for a muffin recipe. However I didn't end up with tunnels or really flat tops and ended up with a round top, which is a better result then any of the others.

For next time I'll make the recipe based on my tips since they seem to most likely bring the results I need. They were delicious muffins regardless of the difficulty's,challenges and confusion brought along. Also I got to look on the bright side of things. There are still edible and I ended up with a festive color within the muffin for Christmas, GREEN!, it was the Christmas gremlins( maybe gizmo) lol :D. These muffins made me so peachy because there full of sweet peaches :) ( so corny lol). They were deliciously moist, a great vegetable/ fruit pairing and a excellent Christmas spices, Cinnamon and Nutmeg! love them :)

Carrot And Peach Muffins (Adapted From Carrot Pineapple Muffins, Company Coming For Christmas)
Printable Version
2 cups all purpose flour
3/4 cup Granulated sugar
1 tsp baking powder
1 tsp baking soda

1 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp salt
2 large eggs
1 cup cooking oil(canola)
1 cup finely grated carrots
1 can of half peaches ( about 3 half's(1/2cup), diced well, with a little juice)
1 tsp vanilla

Mix first 6 ingredients in a large bowl ( Tip: For best results and to avoid green carrot: Sift ingredients together in bowl to evenly distribute within the dry and be sure to evenly measure baking soda.)

Add eggs, oil,  shredded carrot, diced peach/juice and vanilla.Beat on low speed until just moistened.( You can do this but your risking having flat, tunneled muffins)(Tip: For best results as a muffin, fold in ingredients until no flour mixture appears.)


Place about 12-14 muffin liners in muffin tins. Spoon into liner about half way fill.

Bake at 350 F for about 20- 25 minutes until golden brown and toothpick test is clean.

Both my mom and I enter to win and she was the one that got her name picked out of the bowl for the book.Once she found out she won she told me that she give me the book once it got here since I really like baking and creating gingerbread houses.

This is ultimately a great book to use and share with family and friends. I am really excited to figure out which house we should make and I am guessing something for the Christmas season since its December.I really love the fine detail of the photos in this book and the simplicity of the instructions. Really creative ideas for candy use and especially the best part no gingerbread is used :P.

Christmas Cookies :D

Doesn't the words "sugar cookie" remind us all of our childhood, especially during the holiday season.This month cant go without delicious sweet sugar cookies especially with the added twist of holiday stencils. This is the first time ever for myself to do stencils on cookies and I was presently surprised with the results.It was lots of effort and time in my part to get all 4 dozen cookies done, but it was worth it because it was a lot of fun being creative.

Sugar cookies are really simple to make and highly recommended for children especially helping out with the decorating process. It's a great way for them to accomplish something, be creative and eating there creations while its all happening in a few hours.I always loved eating sugar cookie when I was little and I probably helped out decorating as well, but cant really exactly remember it.


Now the shoe is on the other foot and I am the one baking sugar cookies for the whole family to enjoy.Ultimately I chose to bake sugar cookies to give as a small gift to my niece for her 2nd birthday that is today. Hopefully she really likes my sugar cookies because I sure put a lot of effort into to making them. However I am not to worry I haven't met anyone yet that didn't like sugar cookies, maybe the chocolate flavor ones lol.

Christmas Chessy Appretizers

Don't you notice that many Christmas baked goods we see or bake ourselves are mostly in the sweet variety and don't get me wrong that is pure genius :P.However no one should forget or leave out all the great savory treats that are made. So I thought I enter in something savory and cheesy this time around.

I made some Cheese herb crackers inspired in holiday shapes that are best for seasonal/ Christmas parties as an appetizer.There is no party I have to go to and I am not setting up one, but that didn't stop me from making this cheesy morsels. I love that I could easily make it Christmas inspired and that it was found in a holiday recipe book. These crackers actually reminded me a lot of goldfish crackers, but actually richer in flavor assuming because there homemade and fresh.


This recipe was pretty basic to a past recipe I have done for a goldfish inspired cracker. With this cracker  there is the added strong cheddar and pre grated Parmesan along with a few herbs such as oregano and tarragon. Its a simple cracker to make and I suited the shapes to the season making trees, stars, gingerbread men, and bells :).


It had a strong cheddar aroma upon baking and has a rich cheesy flavor when eaten. They are really good on there own or with a dip of some kind. These are a crowd pleaser at any get together or party that can be made pretty quickly. You could even make the dough previously and freeze until you like to cut out the shapes and bake. They are very attractive to the eye and smell wonderful. I don't expect them to last very long at all.

Sadly, at this time I not able to locate the recipe that I used, but I'll make sure to look thoroughly through the magazines and books for it. I am looking through so many Christmas book to use recipe its hard to keep track sometimes.But for now I will link everyone to the previous recipe I have done for goldfish inspired crackers


Sinterklaas Will Come With Candycanes And Presents!

Does anyone remember the days of eating or even making those delicious rice crispy square treats with either family or friends. Maybe you saw them in square format, decorated or in other shapes. They are a loved treat by many people and if your one of the people that have never try them I surely recommended you make them :D. They may seem like a child's treat and adored by them,but we adults shouldn't miss out on the delicious treat.

As you can probably guess I made myself some rice crispy treats and during it bought me down memory lane as a child. However I am so use to making rice crispy treats in square format and this time I  really wanted to make a special holiday treat. 

So I thought since the Dutch Christmas for the little children is coming up on the morning of December 6th I would give something special to my nephew (Mathew) in his little boot.I know he really loves my baking and is probably my best critic :D.


First Christmas Treat!

I love this time of season because its full of warmth, laughter and baking :D. Its the one time in the year where baked treats really shine:D.Its the first year for me that I will be able to document and review all my seasonal treats.I think it will be great fun to share out my ideas and take a bite out of all the future foods.

Its my first Christmas treat of the month and it all started with a few people complaining there were no cookies around lol.So that was a good time to make some kind of Christmas cookie. For me, it had to be simple to make for time and a cookie that will impress.

Shortbread came to mine because in my opinion it would be the best one to start off with for the holidays. Its simple, gorgeous and has that melt in your mouth texture, what's not to love about that :P.I was excited to finally pick out a recipe because I  got to wear around my new Christmas apron lol :D.
 

 

The recipe started out pretty simple with mixing dry ingredients and adding butter, but I do recommend cutting the butter previously to make it easier to work with.

Krysta's Christmas creation for the holidays :D

December is finally here!  Is everyone excited for this years Christmas/Holiday season?


I am!,because that means I can finally start my Christmas/seasonal baking between Dec 1st till Jan 1st. You definitely cant stop with the last week of December, especially new years eve, it really needs the treats too :D.

I am super excited to flash around my recently new Christmas apron all month and finally use a few of  my birthday gifts for delicious treats.

All November I have found a lot of recipes I would love to do for this month and I do wish I could do all of them, but I know there best fit for another Christmas month in the future :D.

I have also put up a new Christmas background for everyone to enjoy all December long :D . Isn't that Santa super cute and its like you could just put him in your little pocket :).

So If your a baking nut like I am or just obsessed with Christmas. I recommend you subscribe or follow to keep up with the posts all December long :). You definitely don't want to miss it and I can tell you now you wont be disappointed. I'll be even talking about some great ideas for baking as Christmas gifts, since I'll be doing some myself. If you haven't tried , its a great way to show your love ones you care :).
