Minty Freshness


Made these bite-size mints on Tuesday night and were ready for devouring the next day . These little mints are perfect for the end of a special meal or just as a snack treat for those peppermint flavor lovers out there.They have a great pastel green shade with a really creamy, melt in your mouth texture.These tasty mints can be made into many different shapes by using pastry or canape cutters.I chose to roll them in the traditionally ball shape.

I found this wonderful simple recipe in "Company's Coming Sweet Cravings"which definitely hit my craving for something sweet and minty.They are a lovely soft candy along with the added bonus of freshening your breath.So these are great to pop in your mouth when you have eaten something like garlic and you wont end up having people step back when your talking. The recipe is really easy to follow,simple ingredients and no baking involved.The only thing involved is the waiting time of overnight and then their ready to be devoured on sight. Enjoy! Try it yourself.

What I Did:
  • Used margarine.
  • Used parchment paper.
  • Rolled into 1/2 inch balls.
Recommendation: Use hard margarine or butter for best results. 
I used soft margarine,made a very soft texture mint, but still taste good.

Mints
2 tbsp Hard margarine or butter,softened
1 Egg white
1/2 tsp peppermint flavoring
3 Drops of green food coloring
2 1/2 cup Icing sugar,sift, more if needed

1. Beat hard margarine or butter, eggs white,peppermint flavoring and food coloring in small bowl.
2. Slowly beat in icing sugar.Shape into 1/2 inch balls or roll out into 1/4 inch thick rope.Cut into 1/2 inch pieces. Arrange on waxed paper baking sheet.Stand overnight until dry.Store in airtight container.Makes 8 dozen,depending on size you make them.
