These peanut butter cookie have the texture of soft and crunchy.
As well the flavour of sweet with the taste of peanut butter and oatmeal.

Oatmeal Peanut Butter Cookies( Adapted From Peanut Butter Cookies, The Big Book Of Baking)

1/2 cup butter, softened plus extra for greasing
1/2 cup smooth peanut butter
1/2 superfine sugar or granulated
1/2 cup brown sugar
1 egg, beaten
1/2 tsp vanilla extract
2/3 cup all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
Pinch of salt
1 1/2 cups rolled oats
1. Oven to 350F, Use nonstick pan or grease pan.
2. Beat soften butter and peanut butter in a large bowl.
3.
3. Beat in superfine sugar and brown sugar, then gradually beat in the egg and vanilla extract.
4.Sift the flour,baking soda, baking powder and salt into bowl and stir in the oats.
5. Place spoonfuls of the cookie dough onto cookie sheets, space well apart to allow spreading.Flatten slightly with a fork.
6.Bake in preheated oven for 12 minutes or until lightly browned.Let cool on cookie sheet for 2 minutes, then transfer to wire rack to cool completely.
