If You Like Apples And Sugar, You Will Love These


Here is another wonderful late night baking adventure using for the first time one of my new recipe books specifically for the muffin variety.These spicy muffins are the quick and simple way to release the tension of craving delicious sweets.Its wonderful crunchy sugar crumble topping is quite a treat along with its great cake like texture with sweet apples and spices.The appearance is very intriguing and the scent is intoxicating while it streams through the air to complete your craving.


While tasting every little sweet morsel of these muffins they reminded me of the infamous apple pie minus the great flaky pastry that goes along with pie.It was the muffin version of apple pie and it was beautiful and delicious. Check it out for yourself and add your own favorite spices to the mix. Enjoy!

What I Did:
  • Used all purpose flour.
  • Used Granulated sugar.
  • Used cupcake liners, which made 12.

Apple And Cinnamon Muffins

Scant 2/3 cup all purpose wholewheat flour
1/2 cup all-purpose white flour
1 1/2 tsp baking powder
Pinch of salt
1 tsp ground cinnamon
Scant 1/4 cup golden superfine sugar
2 small eating apples, peeled,cored and finely chopped
1/2 cup milk
1 egg, beaten
4 tbsp butter,melted

TOPPING:
12 brown sugar lumps,coarsely crushed
1/2 tsp ground cinnamon 

1. Preheat the oven 400F.Place 6 muffin paper liners in a muffin pan.
2. Sift both flours,baking powder, salt and cinnamon together into large bowl and stir in the sugar and chopped apples.
3.Place the milk,egg and butter in a separate bowl and mix.Add the wet ingredients to the dry ingredients and gently stir until just combined.
4. Divide the batter evenly between the paper liners.To make the topping,mix the crushed sugar lumps and cinnamon together and sprinkle over the muffins. Bake in the oven for 20-25 minutes or until risen and golden.Remove muffins from the oven and serve warm or place them on a cooling rack and let cool.
