On Sunday ,me and Krysta planned a friend get together, which was a picnic and swim at our nearest lake.We had about 8-9 people show up and everyone pitched in to bring some food. For the picnic, I made some homemade salsa and dill dip to go along with some tortilla mini rounds.I also had homemade baking, which included blackberry mini muffins and "Rich And Fudge Brownies" .The brownies and mini muffins were eaten in no time at all.
The mini blackberry muffins were a vibrant purple shade and were very moist in texture. They had a great blackberry flavor.They were a hit at the picnic and I definitely should of brought more along.The brownies definitely lived up to their title and I haven't found any other recipe to compete with it.

Mini Blackberry Muffins(Adapted From Blueberry Muffins, Breakfast In Bed, selected recipes from Washington's Bed and Breakfast Inn's)

1/2 cup butter,softened
1 1/4 cup granulated sugar
2 eggs
2 cups all purpose flour
1/2 tsp salt
2 tsp baking powder
1/2 cup milk
2 cups blackberries or blueberries
3 tsp sugar
1.Oven to 375F.
2.Beat butter and sugar until light and fluffy.
3.Add eggs one at time, beating well.
4.In a lg bowl, sift flour, salt and baking powder.
5. Be sure to add dry mix to creamed mixture, alternately with milk.
6.Crush 1/2 cup berries with a fork and stir into batter.
7. Fold in the rest of the whole berries.
8.Place mini muffin liners in a mini muffin pan.
9.Fill liners with batter (dont not over fill).
10.Bake for 30 minutes till puff and firm.Cool before removing.
